"If you love stuffed peppers, but hate all the work that goes into them...this is the PERFECT meal for you!"
1 lb ground beef
4 large bell peppers; diced
1 onion; diced
4 oz chiles; drained
1 regular jar pasta sauce
14.5 oz petite diced tomatoes
1 1/2 C white rice; uncooked
2 C beef broth
1/2 t chili powder; more if desired
1 T olive oil
1/2 t minced garlic; optional
shredded cheese; optional for serving
Add olive oil to Instant Pot. Set to "Saute". Brown ground beef.
When ground beef is still a little pink; add peppers and onions. Continue cooking until onions are softened.
Drain and return to Instant Pot.
Pour pasta sauce, tomatoes, spices, chiles, uncooked rice, and broth on top of meat. DO NOT STIR!
Cook on HIGH PRESSURE for 8 minutes.
Allow Natural Release for 5 minutes.
Release manually.
Stir until combined.
Serve hot with desired toppings.
