1 lb ground beef
1 small onion; diced
1 bell pepper; diced
1 package taco seasoning
2 C beef broth
10 oz Rotel
2 C instant rice
Desired toppings; shredded cheese, sour cream, etc
Brown your ground beef. When beef is still a little pink, add onion and pepper. Continue cooking until softened.
Drain; if needed. Return to pan.
Add taco seasoning, broth, and Rotel.
Bring to boil; stirring occasionally.
Add rice and stir. Cover. Simmer for 8 minutes.
Fluff rice.
Serve hot with desired toppings.
