COOK TIME: 17 minutes | COOK TEMP: 350ºF
1 stick butter; softened
1 C brown sugar; packed
1 C sugar
1½ C creamy peanut butter; NOT natural
3 eggs
1 T vanilla
1½ C quick oats
3 C old-fashioned oats
1 t baking soda
1½ C mini M&M’s
1 C mini chocolate chips
Preheat oven to 350ºF.
Prepare cooking sheet by lining with parchment paper or spraying with non-stick spray.
In large bowl; combine butter, brown sugar, sugar and peanut butter. Mix until fluffy and pale in color; about 1-2 minutes.
Add eggs and vanilla. Mix.
Add oats and baking soda. Mix until combined.
Add in M&M’s and chocolate chips. Stir until combined.
Dollop spoonfuls of dough all over the cooking sheet. Spread it out to fill sheet.
Bake for 17-20 minutes. Edges will be lightly browned and the middle will look underdone, it will finish baking as it cools.
Let cool for at least 1 hour so the bars can firm up.
