1 T olive oil
1 lb Italian Sausage
1 small onion; chopped
2 sweet peppers; chopped
2 cloves garlic; minced
28 oz petite diced tomatoes; NOT drained
6 oz tomato paste
5 C vegetable broth OR water
1 t Italian seasoning
Salt & pepper
1 t sugar
16 oz mini penne pasta
Cheese of choice for topping (parmesan, mozzarella, ricotta, etc)
Set Instant Pot to “SAUTE”. Add oil.
Brown meat. Add onions, peppers and garlic. Cook until softened.
Turn of Instant Pot. Drain meat and return to Instant Pot.
Pour noodles on top of meat.
Add tomatoes, pasta and broth; gently push down to submerge noodles. DO NOT STIR!
Add italian seasoning, sugar, salt and pepper.
Cook on HIGH PRESSURE for 5 minutes.
Allow NATURAL release for 5 minutes.
Manually release.
Stir well.
Serve hot with desired toppings.
