16 oz penne noodles
24 oz pasta sauce or marinara
3 C water
1 t salt
pepper; to taste
1 1/2 lbs chicken; diced *
1 to 2 C Italian cheese blend; use preferred amount
1/2 C grated Parmesan cheese
1 C Panko breadcrumbs
Preheat oven to 425F. Lightly coat a 9X13 baking dish with nonstick spray.
In the prepared baking dish (or large separate bowl) combine uncooked pasta, sauce, water, salt, pepper, and raw chicken. Stir well to combine.
If using separate bowl, transfer mixture to the prepared baking dish.
Cover tightly with aluminum foil (to trap moisture). Bake for 30 minutes.
Remove foil and stir thoroughly.
The pasta will be firm, and some liquid may remain; this is normal.
Evenly top the hotdish with shredded cheese, followed by breadcrumbs and Parmesan cheese.
Uncovered, bake for 10-15 minutes; until the cheeses are melted and golden brown, the pasta is tender, and the chicken is fully cooked.
